  • 1 cup shredded cheese (cheddar or your choice)
  • 2 eggs
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Cooking spray or oil for frying

Instructions

  1. In a skillet, heat a small amount of oil or cooking spray over medium heat.
  2. Whisk the eggs in a bowl and season with salt and pepper.
  3. Add the diced bell peppers and onions to the skillet and sauté until softened.
  4. Pour the eggs into the skillet and scramble until fully cooked.
  5. Place one tortilla in the skillet, sprinkle half of the cheese on top, then add the scrambled egg mixture, and top with the remaining cheese.
  6. Cover with the second tortilla and cook until the bottom is golden brown, about 2-3 minutes.
  7. Carefully flip the quesadilla and cook the other side until golden brown and the cheese is melted.
  8. Remove from the skillet, cut into wedges, and serve warm.
