Ingredients

- 2 flour tortillas
- 1 cup shredded cheese (cheddar or your choice)
- 2 eggs
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- Salt and pepper to taste
- Cooking spray or oil for frying
Instructions
- In a skillet, heat a small amount of oil or cooking spray over medium heat.
- Whisk the eggs in a bowl and season with salt and pepper.
- Add the diced bell peppers and onions to the skillet and sauté until softened.
- Pour the eggs into the skillet and scramble until fully cooked.
- Place one tortilla in the skillet, sprinkle half of the cheese on top, then add the scrambled egg mixture, and top with the remaining cheese.
- Cover with the second tortilla and cook until the bottom is golden brown, about 2-3 minutes.
- Carefully flip the quesadilla and cook the other side until golden brown and the cheese is melted.
- Remove from the skillet, cut into wedges, and serve warm.
Notes
- Feel free to add other ingredients like cooked bacon, sausage, or spinach for extra flavor.
- Serve with salsa or avocado for a delicious dip.
