- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup pumpkin puree
- 1/4 cup brewed coffee
- 1/4 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp pumpkin pie spice
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, mix together the flour, baking powder, baking soda, salt, and pumpkin pie spice.
- In another bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, eggs, coffee, vegetable oil, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fill each cupcake liner about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool completely before frosting.
Notes
- For a stronger coffee flavor, use espresso instead of brewed coffee.
- These cupcakes can be stored in an airtight container for up to 3 days.
- Top with whipped cream and a sprinkle of cinnamon for extra flair.
