Description

Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup pumpkin puree
  • 1/4 cup brewed coffee
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In another bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, eggs, coffee, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fill each cupcake liner about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cupcakes cool completely before frosting.

Notes

  • For a stronger coffee flavor, use espresso instead of brewed coffee.
  • These cupcakes can be stored in an airtight container for up to 3 days.
  • Top with whipped cream and a sprinkle of cinnamon for extra flair.
