Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin spice
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the pumpkin puree, eggs, milk, and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, pumpkin spice, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fill the cupcake liners about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cupcakes cool completely before frosting.

  • For a stronger coffee flavor, add instant coffee granules to the batter.
