Ingredients

- 2 cups rolled oats
- 1 cup pumpkin puree
- 1/2 cup honey or maple syrup
- 1/2 cup almond butter
- 1 teaspoon pumpkin spice
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup chopped nuts (optional)
- 1/2 cup dried fruit (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the rolled oats, pumpkin puree, honey or maple syrup, almond butter, pumpkin spice, vanilla extract, and salt until well combined.
- If using, fold in the chopped nuts and dried fruit.
- Grease a muffin tin and spoon the mixture into each cup, pressing down firmly.
- Bake for 15-20 minutes or until golden brown.
- Allow to cool before removing from the muffin tin.
- Store in an airtight container for up to a week.
