Ingredients

  • 2 cups rolled oats
  • 1 cup pumpkin puree
  • 1/2 cup honey or maple syrup
  • 1/2 cup almond butter
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup dried fruit (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, pumpkin puree, honey or maple syrup, almond butter, pumpkin spice, vanilla extract, and salt until well combined.
  3. If using, fold in the chopped nuts and dried fruit.
  4. Grease a muffin tin and spoon the mixture into each cup, pressing down firmly.
  5. Bake for 15-20 minutes or until golden brown.
  6. Allow to cool before removing from the muffin tin.
  7. Store in an airtight container for up to a week.
