Ingredients

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, spices, and salt.
  3. In another bowl, mix the pumpkin puree, vegetable oil, eggs, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fill each cupcake liner about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cupcakes cool completely on a wire rack.
  8. For the frosting, beat the cream cheese and butter together until smooth.
  9. Gradually add the powdered sugar and vanilla extract, mixing until creamy and fluffy.
  10. Frost the cooled cupcakes with the cream cheese frosting and enjoy!
