Description

Ingredients

  • 1 cup pumpkin puree
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 large flour tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a bowl, mix the pumpkin puree, shredded cheese, cumin, chili powder, salt, and pepper until well combined.
  2. Heat a skillet over medium heat and add a little olive oil.
  3. Place one tortilla in the skillet and spread a portion of the pumpkin mixture on one half of the tortilla.
  4. Fold the tortilla over and cook until golden brown, about 3-4 minutes on each side.
  5. Repeat with the remaining tortillas and filling.
  6. Slice into wedges and serve warm.
