- 1 cup pumpkin puree
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large flour tortillas
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a bowl, mix the pumpkin puree, shredded cheese, cumin, chili powder, salt, and pepper until well combined.
- Heat a skillet over medium heat and add a little olive oil.
- Place one tortilla in the skillet and spread a portion of the pumpkin mixture on one half of the tortilla.
- Fold the tortilla over and cook until golden brown, about 3-4 minutes on each side.
- Repeat with the remaining tortillas and filling.
- Slice into wedges and serve warm.
