- 1/4 cup almond butter
- 1/4 cup honey or maple syrup

- 1/2 tsp vanilla extract
- 1/4 cup chopped nuts (optional)
- 1/4 cup chocolate chips (optional)
Instructions
- In a large bowl, combine the rolled oats, pumpkin puree, almond butter, honey or maple syrup, pumpkin pie spice, and vanilla extract.
- Mix until all ingredients are well combined.
- If desired, fold in chopped nuts and chocolate chips.
- Using your hands, form the mixture into small balls, about 1 inch in diameter.
- Place the energy bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to a week.
