- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 cup pumpkin puree
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup rolled oats
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a bowl, mix flour, brown sugar, and melted butter to form the crust.
- Press the mixture into the bottom of the prepared pan and bake for 10 minutes.
- In another bowl, whisk together pumpkin puree, granulated sugar, eggs, vanilla, cinnamon, nutmeg, ginger, and salt until smooth.
- Pour the pumpkin mixture over the baked crust.
- In a separate bowl, combine oats, flour, brown sugar, and melted butter to make the streusel topping.
- Sprinkle the streusel over the pumpkin layer.
- Bake for an additional 25-30 minutes or until the filling is set.
- Allow to cool before cutting into bars.
Notes
- Serve with whipped cream for added flavor.
- Store leftovers in the refrigerator for up to 3 days.
- Can be frozen for up to 2 months.
