Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, mix flour, brown sugar, and melted butter to form the crust.
  3. Press the mixture into the bottom of the prepared pan and bake for 10 minutes.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, eggs, vanilla, cinnamon, nutmeg, ginger, and salt until smooth.
  5. Pour the pumpkin mixture over the baked crust.
  6. In a separate bowl, combine oats, flour, brown sugar, and melted butter to make the streusel topping.
  7. Sprinkle the streusel over the pumpkin layer.
  8. Bake for an additional 25-30 minutes or until the filling is set.
  9. Allow to cool before cutting into bars.
