Description

A delicious and creamy cheesecake with a pumpkin glaze, perfect for fall celebrations.


Ingredients

  • 1 package Oreo cookies (about 36 cookies)
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Crush the Oreo cookies and mix with melted butter to form the crust.
  3. Press the mixture into the bottom of a springform pan.
  4. In a large bowl, beat the cream cheese until smooth.
  5. Add granulated sugar and vanilla extract, mixing until well combined.
  6. Add eggs one at a time, mixing well after each addition.
  7. Stir in pumpkin puree and pumpkin pie spice until fully incorporated.
  8. Pour the cheesecake batter over the crust in the springform pan.
  9. Bake for 50-60 minutes or until the center is set.
  10. Let the cheesecake cool, then refrigerate for at least 4 hours.
  11. Whip heavy cream with powdered sugar until soft peaks form, then spread over the cheesecake before serving.

Notes

  • For a stronger pumpkin flavor, add more pumpkin puree.
  • Make sure the cream cheese is at room temperature for a smoother batter.
  • Can be topped with additional crushed Oreos for garnish.
