Pumpkin Chickpea Burgers are a delicious and healthy alternative to traditional meat burgers, packed with flavor and nutrients.


Ingredients

  • 1 cup canned chickpeas, drained and rinsed
  • 1 cup pumpkin puree
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
  2. Add the pumpkin puree, breadcrumbs, onion, garlic, cumin, paprika, salt, and pepper. Mix until well combined.
  3. Form the mixture into patties, about 1/2 inch thick.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook the patties for about 4-5 minutes on each side, or until golden brown.
  6. Serve on buns with your favorite toppings.
