Ingredients

- 1 cup canned chickpeas, drained and rinsed
- 1 cup pumpkin puree
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
- Add the pumpkin puree, breadcrumbs, onion, garlic, cumin, paprika, salt, and pepper. Mix until well combined.
- Form the mixture into patties, about 1/2 inch thick.
- Heat olive oil in a skillet over medium heat.
- Cook the patties for about 4-5 minutes on each side, or until golden brown.
- Serve on buns with your favorite toppings.
Notes
- These burgers can be made ahead of time and frozen for later use.
- Feel free to add your favorite spices or herbs for extra flavor.
- Serve with a side salad for a complete meal.
