- 1 can black beans, drained and rinsed
- 8 tostada shells
- 1 cup shredded lettuce

- 1/4 cup diced red onion
- 1/2 cup crumbled feta cheese
- 1 avocado, sliced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the pumpkin puree with cumin, salt, and pepper.
- Spread the pumpkin mixture evenly over each tostada shell.
- Top each tostada with black beans, shredded lettuce, diced tomatoes, red onion, and feta cheese.
- Drizzle with olive oil and add avocado slices on top.
- Bake in the oven for 10-12 minutes until heated through.
