- 1 cup pumpkin puree
- 1 cup grated apple
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs

- 1 teaspoon baking soda
- 1 teaspoon cinnamon

Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together pumpkin puree, grated apple, sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, combine rolled oats, chopped nuts, and a bit of sugar to create the streusel topping.
- Fill each muffin cup with the batter and sprinkle the streusel topping on each muffin.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
Notes
- For a healthier option, you can substitute half of the all-purpose flour with whole wheat flour.
- These muffins can be stored in an airtight container for up to 3 days.
- Feel free to add raisins or cranberries for extra flavor.
