  • Pork Filling:
    • 1 lb ground pork
    • 2 cloves garlic, minced
    • 1 inch ginger, grated
    • 2 green onions, finely chopped
    • 2 tbsp soy sauce
    • 1 tbsp sesame oil
    • 1 tsp salt
    • 1/2 tsp black pepper
  • Cabbage Slaw:
    • 2 cups green cabbage, shredded
    • 1 cup carrots, julienned
    • 1/4 cup cilantro, chopped
    • 2 tbsp rice vinegar
    • 1 tbsp sugar
    • 1 tbsp sesame oil
  • Noodle Base:
    • 8 oz rice noodles
    • 4 cups chicken broth
    • 1 tbsp soy sauce

Instructions

  1. In a large bowl, combine ground pork, garlic, ginger, green onions, soy sauce, sesame oil, salt, and pepper. Mix well and set aside.
  2. In a separate bowl, mix shredded cabbage, carrots, cilantro, rice vinegar, sugar, and sesame oil to prepare the slaw. Set aside.
  3. Cook rice noodles according to package instructions, usually about 5-7 minutes, until al dente. Drain and set aside.
  4. In a large pot, bring chicken broth to a simmer over medium heat. Add soy sauce and cooked noodles, stirring to combine.
  5. In a skillet over medium-high heat, cook the pork mixture until browned and cooked through, about 8-10 minutes. Ensure the pork is no longer pink.
  6. To serve, place a portion of noodles in a bowl, top with cooked pork, and add a generous helping of cabbage slaw. Enjoy hot!

Notes

  • This dish can be made ahead by preparing the pork filling and slaw a day in advance. Store separately in airtight containers in the refrigerator.
