- 2 cups corn kernels (fresh or frozen)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- 1 teaspoon thyme
- 1/2 teaspoon paprika
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the diced potatoes, corn, vegetable broth, thyme, paprika, salt, and pepper. Bring to a boil.
- Reduce heat and let it simmer for about 20 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth, or leave it chunky if preferred.
- Stir in the heavy cream and heat through. Adjust seasoning if necessary.
- Serve hot, garnished with fresh herbs if desired.

- For a vegan version, substitute heavy cream with coconut milk.
