Ingredients

  • 1.5 lbs pork tenderloin
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon garlic, minced
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the pork tenderloin with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat.
  4. Sear the pork tenderloin on all sides until browned.
  5. Transfer the skillet to the oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  6. Remove the pork from the skillet and let it rest.
  7. In the same skillet, add garlic and sauté for 1 minute.
  8. Stir in the heavy cream, Dijon mustard, thyme, and lemon juice; cook until the sauce thickens.
  9. Slice the pork and serve with the Dijon cream sauce drizzled on top.

  • For extra flavor, marinate the pork tenderloin for a few hours before cooking.
  • Serve with roasted vegetables or mashed potatoes for a complete meal.
