- 1.5 lbs pork tenderloin
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup heavy cream
- 2 tablespoons Dijon mustard
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon garlic, minced
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- Season the pork tenderloin with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Sear the pork tenderloin on all sides until browned.
- Transfer the skillet to the oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove the pork from the skillet and let it rest.
- In the same skillet, add garlic and sauté for 1 minute.
- Stir in the heavy cream, Dijon mustard, thyme, and lemon juice; cook until the sauce thickens.
- Slice the pork and serve with the Dijon cream sauce drizzled on top.
Notes
- For extra flavor, marinate the pork tenderloin for a few hours before cooking.
- Serve with roasted vegetables or mashed potatoes for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
