- 1 lb ground beef
- 1 cup pizza sauce
- 1 cup shredded cheese (mozzarella or cheddar)
- 8 flour tortillas
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add diced bell peppers, onions, garlic powder, Italian seasoning, salt, and pepper to the skillet. Cook until vegetables are tender.
- Spread a layer of pizza sauce on the bottom of a baking dish.
- Place a tortilla on a flat surface, add a portion of the beef mixture and some cheese, then roll it up and place it seam-side down in the baking dish.
- Repeat with remaining tortillas and beef mixture.
- Pour the remaining pizza sauce over the rolled enchiladas and sprinkle with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
- Feel free to customize the filling with your favorite pizza toppings.
- For a spicier version, add jalapeños or red pepper flakes.
- Can be made ahead of time and stored in the refrigerator before baking.
