    • 1 cup shelled pistachios, finely chopped
    • 1/2 cup cream cheese, softened
    • 1/4 cup powdered sugar
    • 2 tablespoons rose water
    • 1/4 teaspoon vanilla extract
  • For the Phyllo Pastry:
    • 8 sheets phyllo dough
    • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the finely chopped pistachios, cream cheese, powdered sugar, rose water, and vanilla extract until smooth.
  3. Lay one sheet of phyllo dough on a clean surface and brush it lightly with melted butter.
  4. Layer another sheet of phyllo on top and brush with more butter. Repeat this process until you have 4 layers.
  5. Cut the layered phyllo into squares, about 4×4 inches.
  6. Place a tablespoon of the pistachio filling in the center of each square.
  7. Fold the corners of the phyllo over the filling to create a pocket and brush the tops with more melted butter.
  8. Arrange the phyllo bites on a baking sheet and bake for 15-20 minutes or until golden brown.
  9. Remove from the oven and let cool slightly before serving.
