  • Vegetables:
    • 1 cup cherry tomatoes, halved
    • 1 cup cucumber, diced

    • 1/4 cup red onion, finely chopped
  • Dressing:
    • 1 cup mayonnaise
    • 1/4 cup sour cream

    • 1 teaspoon onion powder

Instructions

  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the cooled pasta with cherry tomatoes, cucumber, red and green bell peppers, and red onion.
  3. In a separate bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, garlic powder, onion powder, salt, and pepper until smooth.
  4. Pour the dressing over the pasta and vegetables, tossing gently to coat everything evenly.
  5. Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld.
