Description

Pineapple Chicken and Rice is a vibrant dish that combines tender, juicy chicken with the sweet tang of pineapple, creating a delightful contrast of flavors. The crispy edges of the chicken, paired with fluffy rice infused with a hint of pineapple juice, create a satisfying texture that will leave your taste buds dancing.

Ingredients

Scale
  • For the Chicken:
    • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
    • 1/2 cup all-purpose flour
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1/2 tsp salt
    • 1/2 tsp black pepper
    • 1/4 cup vegetable oil for frying
  • For the Pineapple Rice:
    • 2 cups jasmine rice
    • 4 cups chicken broth
    • 1 cup fresh pineapple, diced
    • 1/2 cup green onions, chopped
    • 2 tbsp soy sauce
    • 1 tbsp sesame oil

Instructions

  1. In a bowl, mix flour, garlic powder, onion powder, salt, and pepper. Dredge chicken pieces in the mixture until fully coated.
  2. Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken and cook for 5-7 minutes until golden brown and crispy, turning occasionally.
  3. While the chicken cooks, rinse the jasmine rice under cold water until the water runs clear.
  4. In a separate pot, bring chicken broth to a boil. Add the rinsed rice, cover, and reduce heat to low. Cook for 15 minutes or until the rice is tender and liquid is absorbed.
  5. Once the rice is cooked, fluff it with a fork and stir in diced pineapple, green onions, soy sauce, and sesame oil.
  6. Serve the crispy chicken over a bed of pineapple rice and garnish with additional green onions if desired.

Notes

  • This dish can be made ahead of time; store the chicken and rice separately in airtight containers in the refrigerator for up to 3 days.
  • For a vegetarian option, substitute chicken with tofu and use vegetable broth instead of chicken broth.
  • Leftover rice can be reheated in the microwave or on the stovetop with a splash of water to prevent drying out.
