Instructions
- In a bowl, mix flour, garlic powder, onion powder, salt, and pepper. Dredge chicken pieces in the mixture until fully coated.
- Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken and cook for 5-7 minutes until golden brown and crispy, turning occasionally.
- While the chicken cooks, rinse the jasmine rice under cold water until the water runs clear.
- In a separate pot, bring chicken broth to a boil. Add the rinsed rice, cover, and reduce heat to low. Cook for 15 minutes or until the rice is tender and liquid is absorbed.
- Once the rice is cooked, fluff it with a fork and stir in diced pineapple, green onions, soy sauce, and sesame oil.
- Serve the crispy chicken over a bed of pineapple rice and garnish with additional green onions if desired.
