- 1 lb Baby Potatoes
- 1 cup White Vinegar or Apple Cider Vinegar
- 2 cloves Garlic, minced
- 2 sprigs Fresh Dill, or other herbs (thyme, rosemary)
- 1 tsp Mustard Seeds
- 1 tsp Black Peppercorns
- 1/2 tsp Red Pepper Flakes
- 1 tbsp Sea Salt or Kosher Salt
- 1 tsp Sugar
- 1 cup Filtered Water
Instructions
- Prepare the Potatoes: Wash and scrub the baby potatoes thoroughly.
- Boil the Potatoes: In a large pot, bring water to a boil and add the potatoes. Cook until just tender, about 10-15 minutes.
- Mix the Brine: In a separate bowl, combine vinegar, garlic, herbs, salt, and sugar. Stir well until the sugar dissolves.
- Cool Down the Potatoes: Drain the potatoes and let them cool slightly.
- Jar Up the Potatoes: Place the warm potatoes into your jar and pour the brine over them.
- Seal and Chill: Seal the jar tightly and refrigerate for at least 24 hours.
Notes
These pickled potatoes can be made up to a week in advance for deeper flavor. They are enjoyed best when chilled.
