  • For the pecan topping:
    • 1 cup pecans, chopped
    • ½ cup brown sugar
    • ¼ cup corn syrup
    • 2 tbsp unsalted butter
    • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a greased 9×13 inch baking dish.
  3. Bake the crust for 10 minutes until lightly golden, then remove from the oven and let cool.
  4. In a mixing bowl, beat the softened cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. Pour the cheesecake filling over the cooled crust and spread evenly.
  6. In a saucepan, combine chopped pecans, brown sugar, corn syrup, butter, and vanilla extract. Cook over medium heat until the mixture is bubbly, about 3-4 minutes.
  7. Pour the pecan mixture over the cheesecake layer and spread evenly.
  8. Bake for an additional 25-30 minutes, or until the edges are set and the center is slightly jiggly. Let cool completely before slicing into bars.
