- For the pecan topping:
- 1 cup pecans, chopped
- ½ cup brown sugar
- ¼ cup corn syrup
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a greased 9×13 inch baking dish.
- Bake the crust for 10 minutes until lightly golden, then remove from the oven and let cool.
- In a mixing bowl, beat the softened cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- Pour the cheesecake filling over the cooled crust and spread evenly.
- In a saucepan, combine chopped pecans, brown sugar, corn syrup, butter, and vanilla extract. Cook over medium heat until the mixture is bubbly, about 3-4 minutes.
- Pour the pecan mixture over the cheesecake layer and spread evenly.
- Bake for an additional 25-30 minutes, or until the edges are set and the center is slightly jiggly. Let cool completely before slicing into bars.
