Description

Peach Pie Cruffins are a delightful fusion of flaky pastry and juicy peach filling, creating a sensory experience that is both comforting and indulgent. The buttery layers melt in your mouth, while the sweet, spiced peaches add a burst of flavor that dances on your palate.

Ingredients

Scale
  • For the Dough:
    • 2 cups all-purpose flour
    • 1/2 cup unsalted butter, cold and cubed
    • 1/4 cup granulated sugar
    • 1/2 teaspoon salt
    • 1/4 cup ice water
  • For the Peach Filling:
    • 3 ripe peaches, peeled and diced
    • 1/4 cup brown sugar
    • 1 teaspoon cinnamon
    • 1 tablespoon lemon juice
    • 1 tablespoon cornstarch
  • For the Topping:
    • 1/4 cup powdered sugar
    • 1 tablespoon milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. In a separate bowl, combine diced peaches, brown sugar, cinnamon, lemon juice, and cornstarch. Set aside.
  5. Roll out the dough on a floured surface into a rectangle about 1/4 inch thick.
  6. Cut the dough into strips and layer them in a muffin tin, creating a cruffin shape.
  7. Fill each cruffin with the peach mixture, then fold the dough over the top.
  8. Bake for 25-30 minutes or until golden brown and puffed up. The filling should be bubbling.
  9. Let cool slightly before drizzling with a mixture of powdered sugar and milk.

Notes

  • Make-ahead: The dough can be prepared a day in advance and stored in the refrigerator.
  • Storage: Store leftover cruffins in an airtight container at room temperature for up to 2 days.
  • Substitutions: Use frozen peaches if fresh are not available, adjusting sugar based on sweetness.
