Instructions
- Preheat the oven to 350°F (175°C).

- Bake for 10-12 minutes or until the edges are golden brown.
- Let the cookies cool completely.
- Once cooled, sandwich a slice of peach and a scoop of ice cream between two cookies.
- Serve immediately or freeze for later enjoyment.
