Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the flour, baking soda, baking powder, and salt; set aside.
  3. In a large bowl, cream together the softened butter and sugar until smooth and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract until well combined.
  5. Gradually blend in the dry ingredients until just combined.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  7. Bake for 8-10 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
  8. For the filling, beat together the softened butter, powdered sugar, heavy cream, and vanilla extract until smooth and creamy. Divide into bowls and add food coloring to achieve desired pastel shades.
  9. Once cookies are cool, spread a generous amount of filling on the flat side of one cookie and top with another cookie, pressing gently to create a sandwich.
