- 6 large croissants, torn into pieces
- 8 large eggs
- 2 cups milk
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked and crumbled bacon or sausage (optional)
- 1/4 cup chopped green onions

Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Add the torn croissant pieces to the egg mixture and stir to combine.
- Fold in the cheese, cooked bacon or sausage (if using), and green onions.
- Pour the mixture into a greased baking dish and cover with foil.
- Refrigerate overnight to allow the flavors to meld.
- The next morning, remove the casserole from the fridge and let it sit at room temperature for 30 minutes.
- Bake covered for 30 minutes, then remove the foil and bake for an additional 15-20 minutes until golden brown and set.
- Let cool slightly before serving.
