Ingredients

  • Chicken: 1 lb boneless, skinless chicken breasts, diced

  • Vegetables: 1 cup diced bell peppers, 1 cup corn (canned or frozen), 1 small onion, diced
  • Spices: 1 tsp chili powder, 1 tsp cumin, 1/2 tsp garlic powder, salt and pepper to taste
  • Toppings: 1/2 cup sour cream, 1/4 cup sliced jalapeños, 1/4 cup chopped cilantro

Instructions

  1. In a large pot, heat 1 tablespoon of oil over medium heat. Add the diced onion and bell peppers, sautéing until softened, about 5 minutes.
  2. Add the diced chicken to the pot, cooking until browned on all sides, approximately 5-7 minutes.
  3. Stir in the chili powder, cumin, garlic powder, salt, and pepper, cooking for an additional minute until fragrant.
  4. Add the rinsed rice and chicken broth to the pot, bringing it to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
