A delicious and easy one-pan meal featuring tender chicken cooked in a bold honey BBQ sauce served over rice.


Ingredients

  • 1 lb chicken thighs
  • 1 cup rice
  • 1 cup chicken broth
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Season chicken thighs with garlic powder, onion powder, salt, and pepper.
  3. Add chicken to the pan and cook until browned on both sides.
  4. In a bowl, mix honey and BBQ sauce together.
  5. Pour the honey BBQ mixture over the chicken in the pan.
  6. Add rice and chicken broth to the pan, stirring to combine.
  7. Bring to a boil, then reduce heat to low and cover.
  8. Cook for 20-25 minutes or until rice is tender and chicken is cooked through.
  9. Garnish with chopped green onions before serving.

Notes

  • For a spicier version, add red pepper flakes to the sauce.
  • Feel free to substitute chicken thighs with chicken breasts.
