  • For the Biscuit Layer:
    • 200g digestive biscuits, crushed
  • For the Cream Filling:
    • 400ml heavy cream
    • 200g cream cheese, softened
    • 100g powdered sugar
    • 1 tsp vanilla extract
  • For the Chocolate Topping:
    • 150g dark chocolate, chopped
    • 50g unsalted butter

Instructions

  1. In a large bowl, combine the crushed digestive biscuits and set aside.
  2. In another bowl, whip the heavy cream until soft peaks form.
  3. Add the softened cream cheese, powdered sugar, and vanilla extract to the whipped cream, and gently fold until well combined.
  4. Layer half of the biscuit crumbs in the bottom of a rectangular dish.
  5. Spread half of the cream filling over the biscuit layer, smoothing it out evenly.
  6. Repeat the layers with the remaining biscuit crumbs and cream filling.
  7. In a small saucepan, melt the dark chocolate and butter over low heat, stirring until smooth.
  8. Pour the chocolate mixture over the top layer of cream filling, spreading it evenly.
  9. Refrigerate the cake for at least 4 hours or until set.
  10. Slice and serve chilled, garnished with chocolate shavings if desired.

  • This cake can be made a day in advance and stored in the refrigerator for up to 3 days.
  • For a lighter version, substitute half of the heavy cream with Greek yogurt.
