  • Broth: 8 cups beef broth

    • 2 bay leaves

    • 2 tbsp olive oil
    • 1 large onion, chopped
    • 3 cloves garlic, minced

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Increase the heat to medium-high and add the beef cubes, browning them on all sides, approximately 5-7 minutes.
  4. Pour in the beef broth and bring to a boil. Skim off any foam that rises to the surface.
  5. Add the diced carrots, potatoes, celery, green beans, corn, thyme, rosemary, bay leaves, salt, and pepper.
  6. Reduce the heat to low, cover, and let simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
  7. Remove the bay leaves before serving. Adjust seasoning if necessary.
