Description

  • Dough:
    • 4 cups all-purpose flour
    • 1 packet (2 1/4 tsp) active dry yeast
    • 1 1/2 cups warm water (110°F)
    • 1/4 cup granulated sugar
    • 1 tsp salt
    • 1/4 cup unsalted butter, melted
  • Filling:
    • 8 oz fresh mozzarella cheese, cut into 1-inch cubes
  • Topping:
    • 1/2 cup grated Parmesan cheese
    • 2 tbsp fresh rosemary, finely chopped
    • 1/4 cup coarse sea salt

Instructions

  1. In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for 5 minutes until frothy.
  2. Add melted butter, salt, and flour to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Once risen, punch down the dough and divide it into 12 equal pieces.
  7. Flatten each piece, place a cube of mozzarella in the center, and fold the dough over to seal.
  8. Roll each piece into a long rope and twist into a pretzel shape.
  9. In a large pot, bring 10 cups of water to a boil and add 2/3 cup baking soda.
  10. Boil each pretzel for 30 seconds, then remove and place on the prepared baking sheet.
  11. Brush with water, sprinkle with Parmesan, rosemary, and sea salt.
  12. Bake for 12-15 minutes or until golden brown.
