Description
Monterey Chicken Spaghetti is a delightful dish that combines tender chicken with a creamy, savory sauce, enveloping al dente spaghetti. The rich flavors of melted cheese and zesty spices create a comforting experience that tantalizes the taste buds with every bite.
Ingredients
Scale
- For the Chicken:
- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- For the Sauce:
- 1 cup heavy cream
- 1 cup shredded Monterey Jack cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- For the Pasta:
- 8 ounces spaghetti
- Water for boiling
Instructions
- In a large pot, bring water to a boil and cook the spaghetti according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- While the pasta cooks, season the chicken breasts with garlic powder, paprika, salt, and pepper.
- In a large skillet, heat olive oil over medium heat. Add the seasoned chicken and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from skillet and let rest for 5 minutes before slicing.
- In the same skillet, reduce heat to low and add heavy cream, stirring continuously. Gradually mix in Monterey Jack and Parmesan cheese until melted and smooth.
- Add Italian seasoning to the sauce and stir well.
- Combine the cooked spaghetti with the creamy sauce, mixing until well coated.
- Top the pasta with sliced chicken and serve immediately.
Notes
- This dish can be made ahead by preparing the sauce and chicken separately, then combining them with freshly cooked pasta just before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For a lighter version, substitute heavy cream with half-and-half or a plant-based cream alternative.
