Description

Monterey Chicken Spaghetti is a delightful dish that combines tender chicken with a creamy, savory sauce, enveloping al dente spaghetti. The rich flavors of melted cheese and zesty spices create a comforting experience that tantalizes the taste buds with every bite.

Ingredients

Scale
  • For the Chicken:
    • 2 boneless, skinless chicken breasts (about 1 pound)
    • 1 teaspoon garlic powder
    • 1 teaspoon paprika
    • Salt and pepper to taste
  • For the Sauce:
    • 1 cup heavy cream
    • 1 cup shredded Monterey Jack cheese
    • 1/2 cup grated Parmesan cheese
    • 1 tablespoon olive oil
    • 1 teaspoon Italian seasoning
  • For the Pasta:
    • 8 ounces spaghetti
    • Water for boiling

Instructions

  1. In a large pot, bring water to a boil and cook the spaghetti according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. While the pasta cooks, season the chicken breasts with garlic powder, paprika, salt, and pepper.
  3. In a large skillet, heat olive oil over medium heat. Add the seasoned chicken and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from skillet and let rest for 5 minutes before slicing.
  4. In the same skillet, reduce heat to low and add heavy cream, stirring continuously. Gradually mix in Monterey Jack and Parmesan cheese until melted and smooth.
  5. Add Italian seasoning to the sauce and stir well.
  6. Combine the cooked spaghetti with the creamy sauce, mixing until well coated.
  7. Top the pasta with sliced chicken and serve immediately.

Notes

  • This dish can be made ahead by preparing the sauce and chicken separately, then combining them with freshly cooked pasta just before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a lighter version, substitute heavy cream with half-and-half or a plant-based cream alternative.
