Ingredients

  • 8 oz dark chocolate, chopped

  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a heatproof bowl, melt the dark chocolate over a pot of simmering water.
  3. In a separate bowl, whisk the egg yolks and sugar until pale and creamy.
  4. Stir in the brewed coffee and melted chocolate into the egg mixture.
  5. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  6. Gently fold the egg whites into the chocolate mixture.
  7. In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.
  8. Fold the whipped cream into the chocolate mixture until well combined.
  9. Pour the mousse into a cake pan and refrigerate for at least 4 hours or until set.
  10. Serve chilled, garnished with chocolate shavings or whipped cream if desired.
