Instructions
- Preheat the oven to 350°F (175°C).
- In a heatproof bowl, melt the dark chocolate over a pot of simmering water.
- In a separate bowl, whisk the egg yolks and sugar until pale and creamy.

- In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Gently fold the egg whites into the chocolate mixture.
- In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.
- Fold the whipped cream into the chocolate mixture until well combined.
- Pour the mousse into a cake pan and refrigerate for at least 4 hours or until set.
- Serve chilled, garnished with chocolate shavings or whipped cream if desired.

- For a stronger coffee flavor, use espresso instead of brewed coffee.
