- 1/2 cup sugar

- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 2 large eggs
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of a muffin tin to form crusts.
- In another bowl, beat the cream cheese until smooth.
- Add pumpkin puree, sugar, vanilla extract, and spices; mix until well combined.
- Beat in the eggs one at a time until just incorporated.
- Pour the pumpkin cheesecake mixture into the prepared crusts.
- Bake for 20-25 minutes or until the centers are set.
- Let cool before refrigerating for at least 2 hours.
- Serve chilled and enjoy!
