Ingredients
- Eggs: 6 large eggs
- Filling:
- Mayonnaise: 1/3 cup
- Mustard: 1 tablespoon (Dijon or yellow)
- Sweet pickle relish: 1 tablespoon
- Salt: 1/4 teaspoon
- Pepper: 1/8 teaspoon
- Smoked paprika: 1/2 teaspoon
- Fresh chives: 1 tablespoon, finely chopped
Instructions
- Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat.
- Once boiling, cover the pot, remove it from heat, and let it sit for 12 minutes.
- After 12 minutes, transfer the eggs to an ice bath to cool for 5 minutes.
- Peel the eggs and slice them in half lengthwise.
- Remove the yolks and place them in a mixing bowl. Add mayonnaise, mustard, relish, salt, pepper, and smoked paprika.
- Mix until smooth and creamy, then fold in the chopped chives.
- Fill the egg whites with the yolk mixture using a spoon or piping bag.
- Sprinkle with additional smoked paprika and chives for garnish before serving.
