Ingredients

  • Eggs: 6 large eggs
  • Filling:
    • Mayonnaise: 1/3 cup
    • Mustard: 1 tablespoon (Dijon or yellow)
    • Sweet pickle relish: 1 tablespoon
    • Salt: 1/4 teaspoon
    • Pepper: 1/8 teaspoon
    • Smoked paprika: 1/2 teaspoon
    • Fresh chives: 1 tablespoon, finely chopped

Instructions

  1. Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat.
  2. Once boiling, cover the pot, remove it from heat, and let it sit for 12 minutes.
  3. After 12 minutes, transfer the eggs to an ice bath to cool for 5 minutes.
  4. Peel the eggs and slice them in half lengthwise.
  5. Remove the yolks and place them in a mixing bowl. Add mayonnaise, mustard, relish, salt, pepper, and smoked paprika.
  6. Mix until smooth and creamy, then fold in the chopped chives.
  7. Fill the egg whites with the yolk mixture using a spoon or piping bag.
  8. Sprinkle with additional smoked paprika and chives for garnish before serving.
