Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup corn (canned or grilled)
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, chili powder, cumin, salt, and pepper.
  3. Brush the chicken breasts with the spice mixture.
  4. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  5. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  6. In a large bowl, combine mixed greens, cherry tomatoes, avocado, corn, black beans, red onion, and cilantro.
  7. Add the sliced chicken on top of the salad.
  8. Drizzle with lime juice and toss gently to combine.
  9. Serve immediately and enjoy!
