- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup corn (canned or grilled)
- 1/2 cup black beans, rinsed and drained
- 1/4 cup red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix olive oil, chili powder, cumin, salt, and pepper.
- Brush the chicken breasts with the spice mixture.
- Grill the chicken for 6-7 minutes on each side or until fully cooked.
- Remove the chicken from the grill and let it rest for a few minutes before slicing.
- In a large bowl, combine mixed greens, cherry tomatoes, avocado, corn, black beans, red onion, and cilantro.
- Add the sliced chicken on top of the salad.
- Drizzle with lime juice and toss gently to combine.
- Serve immediately and enjoy!
