    • 1 lb flank steak
    • 3 tbsp olive oil
    • 2 tbsp red wine vinegar
    • 2 cloves garlic, minced
    • 1 tsp dried oregano
    • 1 tsp paprika

  • For the Couscous:
    • 1 cup couscous
    • 1 1/4 cups vegetable broth
    • 1 tbsp lemon juice
    • 1/4 cup parsley, chopped
  • For the Toppings:
    • 1 cup cherry tomatoes, halved
    • 1 cucumber, diced
    • 1/2 red onion, thinly sliced
    • 1/2 cup feta cheese, crumbled
    • 1/4 cup Kalamata olives, pitted and sliced

Instructions

  1. In a bowl, whisk together olive oil, red wine vinegar, minced garlic, oregano, paprika, salt, and pepper. Marinate the flank steak in this mixture for at least 30 minutes.
  2. Preheat a grill or grill pan to medium-high heat (about 400°F).
  3. Grill the marinated steak for 5-7 minutes on each side, or until it reaches your desired doneness (medium-rare is about 135°F).
  4. Remove the steak from the grill and let it rest for 5 minutes before slicing it thinly against the grain.
  5. In a saucepan, bring vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork and mix in lemon juice and parsley.
  6. Assemble the bowls by placing a generous scoop of couscous at the bottom, followed by sliced steak, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  7. Drizzle with additional olive oil and lemon juice if desired, and serve immediately.

Notes
