- 1 1/4 cups vegetable broth
- 1 tbsp lemon juice
- 1/4 cup parsley, chopped
- For the Toppings:
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, pitted and sliced
Instructions
- In a bowl, whisk together olive oil, red wine vinegar, minced garlic, oregano, paprika, salt, and pepper. Marinate the flank steak in this mixture for at least 30 minutes.
- Preheat a grill or grill pan to medium-high heat (about 400°F).
- Grill the marinated steak for 5-7 minutes on each side, or until it reaches your desired doneness (medium-rare is about 135°F).
- Remove the steak from the grill and let it rest for 5 minutes before slicing it thinly against the grain.
- In a saucepan, bring vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork and mix in lemon juice and parsley.
- Assemble the bowls by placing a generous scoop of couscous at the bottom, followed by sliced steak, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- Drizzle with additional olive oil and lemon juice if desired, and serve immediately.

- This dish can be made ahead by marinating the steak and preparing the couscous a day in advance. Store the components separately in airtight containers.
