- 2 medium zucchinis, sliced
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the chicken, zucchini, cherry tomatoes, garlic, olive oil, oregano, basil, salt, and pepper.
- Toss until everything is well coated.
- Transfer the mixture to a baking dish and spread it out evenly.
- Sprinkle the feta cheese on top.
- Bake for 25-30 minutes, or until the chicken is cooked through and the zucchini is tender.
- Remove from the oven and let it cool for a few minutes before serving.
