Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes or until the edges are set. Let cool completely.
  7. In a separate bowl, beat the softened butter until creamy, then gradually add the powdered sugar and maple syrup, mixing until smooth.
  8. Spread or pipe the maple frosting onto the flat side of half of the cookies, then sandwich with the remaining cookies.
