- 2 cups rolled oats
- 1 cup pecans, chopped
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup dried fruit (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine rolled oats, chopped pecans, and salt.
- In a separate bowl, mix together maple syrup, melted coconut oil, and vanilla extract.
- Pour the wet ingredients over the dry ingredients and stir until well combined.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, stirring halfway through, until golden brown.
- Remove from the oven and let it cool completely. Add dried fruit if desired.
- Store in an airtight container for up to two weeks.
Notes
- Feel free to substitute pecans with other nuts or seeds.
- For a sweeter granola, add more maple syrup.
- This granola can be enjoyed with milk, yogurt, or as a snack on its own.
