Ingredients

Scale
  • For the Chicken:
    • 4 boneless, skinless chicken thighs (about 1.5 lbs)
    • 1/4 cup pure maple syrup
    • 2 tablespoons Dijon mustard
    • 2 tablespoons olive oil
    • 1 teaspoon garlic powder
    • Salt and pepper to taste
  • For the Sweet Potatoes:
    • 2 large sweet potatoes (about 1.5 lbs), peeled and cubed
    • 2 tablespoons olive oil
    • 1 teaspoon paprika
    • Salt and pepper to taste
  • For Garnish:
    • Fresh parsley, chopped
    • Optional: Crumbled feta cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together maple syrup, Dijon mustard, olive oil, garlic powder, salt, and pepper to create the marinade.
  3. Place the chicken thighs in a baking dish and pour the marinade over them, ensuring they are well coated.
  4. In a separate bowl, toss the cubed sweet potatoes with olive oil, paprika, salt, and pepper.
  5. Spread the sweet potatoes on a baking sheet lined with parchment paper.
  6. Bake the chicken and sweet potatoes in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the sweet potatoes are tender and slightly caramelized.
  7. Remove from the oven and let the chicken rest for 5 minutes before slicing.
  8. Serve the sliced chicken over a bed of roasted sweet potatoes, garnished with fresh parsley and optional feta cheese.

Notes

  • This dish can be made ahead of time; marinate the chicken and roast the sweet potatoes a day in advance, then reheat before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a lower-carb option, substitute sweet potatoes with cauliflower florets.
