A delicious and healthy salad featuring Brussels sprouts, dressed with a sweet and tangy maple Dijon vinaigrette.
Ingredients

- 1 lb Brussels sprouts, trimmed and halved
- 1/4 cup olive oil
- 2 tbsp maple syrup
- 2 tbsp Dijon mustard
- 1/4 cup apple cider vinegar
- Salt and pepper to taste
- 1/2 cup walnuts, chopped
- 1/2 cup dried cranberries
- 1/4 cup feta cheese, crumbled (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
- Spread the Brussels sprouts on a baking sheet and roast for 20-25 minutes until golden brown.
- In a small bowl, whisk together maple syrup, Dijon mustard, and apple cider vinegar.
- Once the Brussels sprouts are done, let them cool slightly, then combine them in a large bowl with walnuts, cranberries, and the dressing.
- Toss to combine and top with feta cheese if desired.
- Serve warm or at room temperature.
Notes
- For a vegan version, omit the feta cheese.
- This salad can be made ahead of time; just add the dressing right before serving.
- Feel free to add other ingredients like apples or pears for extra sweetness.
