A delicious and healthy salad featuring Brussels sprouts, dressed with a sweet and tangy maple Dijon vinaigrette.


Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 1/4 cup olive oil
  • 2 tbsp maple syrup
  • 2 tbsp Dijon mustard
  • 1/4 cup apple cider vinegar
  • Salt and pepper to taste
  • 1/2 cup walnuts, chopped
  • 1/2 cup dried cranberries
  • 1/4 cup feta cheese, crumbled (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
  3. Spread the Brussels sprouts on a baking sheet and roast for 20-25 minutes until golden brown.
  4. In a small bowl, whisk together maple syrup, Dijon mustard, and apple cider vinegar.
  5. Once the Brussels sprouts are done, let them cool slightly, then combine them in a large bowl with walnuts, cranberries, and the dressing.
  6. Toss to combine and top with feta cheese if desired.
  7. Serve warm or at room temperature.

Notes

  • For a vegan version, omit the feta cheese.
  • This salad can be made ahead of time; just add the dressing right before serving.
