Description

A comforting dish of tender chicken marinated in a sweet and savory glaze, served with creamy coconut jasmine rice.


Ingredients

  • 2 skinless, boneless chicken breasts
  • 1/4 cup maple syrup
  • 1 cup coconut milk
  • 1 cup jasmine rice
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Marinate the chicken by whisking together maple syrup, soy sauce, salt, and pepper. Coat the chicken in the marinade and let it sit for 30 minutes to 2 hours.
  2. Heat olive oil in a skillet over medium heat and add the marinated chicken. Sear for 6–7 minutes on each side until golden brown.
  3. Rinse the jasmine rice under cold water in a fine mesh strainer until the water runs clear.
  4. Combine coconut milk and 1.5 cups water in a saucepan. Bring to a boil, then add the rinsed rice. Cover and simmer for 15 minutes until tender.
  5. Fluff the rice with a fork and serve alongside the glazed chicken, garnished with chopped green onions.

Notes

Marinating the chicken overnight intensifies flavors. For quicker cooking, use an air fryer at 380°F for about 20 minutes.
