- 2 skinless, boneless chicken breasts
- 1/4 cup maple syrup
- 1 cup coconut milk
- 1 cup jasmine rice
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Marinate the chicken by whisking together maple syrup, soy sauce, salt, and pepper. Coat the chicken in the marinade and let it sit for 30 minutes to 2 hours.
- Heat olive oil in a skillet over medium heat and add the marinated chicken. Sear for 6–7 minutes on each side until golden brown.
- Rinse the jasmine rice under cold water in a fine mesh strainer until the water runs clear.
- Combine coconut milk and 1.5 cups water in a saucepan. Bring to a boil, then add the rinsed rice. Cover and simmer for 15 minutes until tender.
- Fluff the rice with a fork and serve alongside the glazed chicken, garnished with chopped green onions.
Notes
Marinating the chicken overnight intensifies flavors. For quicker cooking, use an air fryer at 380°F for about 20 minutes.
