Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted
  • 1/2 teaspoon salt
  • 2 cups fresh mango, diced
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine the rolled oats, flour, brown sugar, melted butter, and salt in a large mixing bowl until crumbly.
  3. Press half of the mixture into the bottom of the prepared baking pan.
  4. Combine the diced mango, lemon juice, granulated sugar, and vanilla extract in a separate bowl.
  5. Spread the mango mixture evenly over the crust.
  6. Sprinkle the remaining crumble mixture on top of the mango filling.
  7. Bake for 25–30 minutes or until golden brown.
  8. Cool completely before cutting into squares.
