Ingredients

Scale
  • Cake:
    • 1 ½ cups all-purpose flour
    • 1 tsp baking powder
    • ½ tsp baking soda
    • ¼ tsp salt
    • ½ cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract
    • ½ cup buttermilk
    • 1 cup ripe mango puree (about 2 medium mangoes)
    • 1 tbsp lime zest
  • Lime Glaze:
    • 1 cup powdered sugar
    • 23 tbsp fresh lime juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, starting and ending with the flour mixture.
  6. Fold in the mango puree and lime zest until just combined.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the edges are lightly golden.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. For the glaze, whisk together the powdered sugar and lime juice until smooth, then drizzle over the cooled cake.
