- 8 rice paper wrappers

- 1 cup shredded lettuce

- 1/4 cup fresh cilantro leaves
- For the Dipping Sauce:
- 1/4 cup fish sauce
- 2 tablespoons lime juice
- 1 tablespoon erythritol (or sweetener of choice)
- 1 clove garlic, minced
- 1 small chili, finely chopped (optional)
Instructions
- Prepare the dipping sauce by mixing fish sauce, lime juice, erythritol, garlic, and chili in a bowl. Set aside.
- Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens.
- Lay the softened wrapper on a clean surface. Place a few shrimp, lettuce, carrots, cucumber, mint, and cilantro in the center.
- Fold the sides of the wrapper over the filling, then roll it tightly from the bottom to the top.
- Repeat the process with the remaining wrappers and filling ingredients.
- Serve the rolls with the dipping sauce on the side.
