  • 2 cups cooked lobster meat, chopped
  • 1 cup heavy cream
  • 1 cup chicken or seafood broth
  • 1/2 cup frozen peas
  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 1/4 cup onion, diced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the onion, carrots, and celery, and sauté until softened.
  3. Stir in the flour and cook for 1-2 minutes.
  4. Add the broth and heavy cream, stirring until the mixture thickens.
  5. Mix in the lobster meat, peas, Old Bay seasoning, salt, and pepper.
  6. Pour the lobster mixture into a pie dish and cover with the pie crust, sealing the edges.
  7. Cut slits in the top of the crust to allow steam to escape.
  8. Bake for 25-30 minutes or until the crust is golden brown.
  9. Let it cool for a few minutes before serving.

Notes

  • For a richer flavor, you can add a splash of white wine to the filling.
