- 2 cups cooked lobster meat, chopped
- 1 cup heavy cream
- 1 cup chicken or seafood broth
- 1/2 cup frozen peas
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- 1/4 cup onion, diced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon Old Bay seasoning
- Salt and pepper to taste
- 1 pie crust (store-bought or homemade)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, melt the butter over medium heat. Add the onion, carrots, and celery, and sauté until softened.
- Stir in the flour and cook for 1-2 minutes.
- Add the broth and heavy cream, stirring until the mixture thickens.
- Mix in the lobster meat, peas, Old Bay seasoning, salt, and pepper.
- Pour the lobster mixture into a pie dish and cover with the pie crust, sealing the edges.
- Cut slits in the top of the crust to allow steam to escape.
- Bake for 25-30 minutes or until the crust is golden brown.
- Let it cool for a few minutes before serving.
Notes
- For a richer flavor, you can add a splash of white wine to the filling.
- Feel free to substitute the lobster with shrimp or crab if desired.
- Serve with a side salad for a complete meal.
