Ingredients

  • Potatoes: 4 large russet potatoes, scrubbed and diced
  • Shrimp: 1 pound large shrimp, peeled and deveined
  • Bacon: 6 strips of bacon, chopped
  • Cheese Sauce: 1 cup shredded cheddar cheese, 1/2 cup cream cheese, 1/2 cup sour cream, 1/2 cup milk, 1 teaspoon garlic powder, 1 teaspoon onion powder, salt and pepper to taste
  • Toppings: 1/4 cup green onions, chopped, 1/4 cup crispy fried onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large pot, boil the diced potatoes for 15-20 minutes until fork-tender. Drain and set aside.
  3. In a skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove and drain on paper towels.
  4. In the same skillet, add the shrimp and cook for 3-4 minutes until pink and opaque.
  5. In a mixing bowl, combine the cheddar cheese, cream cheese, sour cream, milk, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  6. In a large baking dish, combine the cooked potatoes, shrimp, and bacon. Pour the cheese sauce over the top and mix gently.
  7. Bake in the preheated oven for 20-25 minutes until bubbly and golden on top.
  8. Remove from the oven and sprinkle with green onions and crispy fried onions before serving.
