- 1 cup fresh raspberries
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a bowl, mix together the flour, softened butter, sugar, and salt until crumbly.
- Press the mixture into the bottom of the prepared baking dish to form the crust.
- Bake the crust for 15 minutes or until lightly golden.
- In another bowl, whisk together the eggs, sugar, lemon juice, and lemon zest until well combined.
- Gently fold in the raspberries into the lemon mixture.
- Pour the filling over the baked crust and spread evenly.
- Bake for an additional 20-25 minutes until the filling is set.
- Allow to cool completely before cutting into bars.
- Dust with powdered sugar before serving, if desired.
Notes
- For a stronger lemon flavor, add more lemon zest.
- These bars can be stored in the refrigerator for up to a week.
- Feel free to substitute frozen raspberries if fresh ones are not available.
