Instructions
- Preheat the oven to 225°F (110°C) and line a baking sheet with parchment paper.
- In a clean bowl, beat the egg whites and cream of tartar until soft peaks form.
- Gradually add the sugar, continuing to beat until stiff peaks form.
- Fold in the vanilla extract and poppy seeds gently.
- Pipe or spoon the meringue mixture onto the prepared baking sheet in small circles.
- Bake for 1.5 to 2 hours until the meringues are dry and crisp.
- Let the meringues cool completely.
- Whip the heavy cream until soft peaks form.
- Assemble the sandwiches by spreading lemon curd on one meringue and topping it with whipped cream, then sandwiching it with another meringue.
