Ingredients

  • 4 chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, combine the rice, chicken broth, lemon juice, lemon zest, olive oil, thyme, rosemary, salt, and pepper.
  3. Place the chicken thighs on top of the rice mixture.
  4. Cover the dish with aluminum foil and bake for 30 minutes.
  5. Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the rice is tender.
  6. Garnish with fresh parsley before serving.
