- 4 chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a large baking dish, combine the rice, chicken broth, lemon juice, lemon zest, olive oil, thyme, rosemary, salt, and pepper.
- Place the chicken thighs on top of the rice mixture.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the rice is tender.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, marinate the chicken in lemon juice and herbs for a few hours before baking.
